Банатска месна трпеза

Abstract

У раду се на основу лексичко-семантичке анализе представља кулинарски материјал у вези са месом, јелима од меса и месним прерађевинама у неким севернобанатским селима – Ђали, Санаду и Мокрину. При томе се дају релације према појединим српским пунктовима у румунском и мађарском Банату. Анализу прате изводи из транскрипата којима се приказује функција банатског кулинарија у етнографском и социјалном контексту.

The paper is a lexical and semantic analysis of the culinary vocabulary related to meat, processed meat products and meals made of meat, in some villages in the northern part of Banat (Ćala, Sanad and Mokrin), with some Serbian places in Romanian and Hungarian Banat included. The analysis is supported by the excerpts from the transcripts indicating the functions of the Banat cuisine and culinary vocabulary in the ethnographic and social context. The results of the analysis have shown the abundance of borrowed words in the thematic areas Meals made of meat and Processed meat products, and a prevalence of local, domestic lexis in the semantic group Types and cuts of meat.
